Banana Oatmeal Raisin Cookies

Laura’s Oatmeal Banana Cookies

(gluten, egg, dairy, & processed-sugar free)

 

Ingredients*:

 

1 large ripened banana

1-1/2 cups of uncooked, gluten-free old fashioned oatmeal

3 tablespoons almond/cashew butter (or almond butter)

1 teaspoon cinnamon

½ teaspoon baking soda

A few grinds of sea salt

½ teaspoon vanilla

¼ to ½ cup raisins

¼ cup unsweetened flake coconut (optional)

Coconut oil for baking with a stainless steel baking pan

 

* I use organic ingredients whenever possible.

 

Instructions:

 

Heat oven to 375 degrees.

 

Mash banana in a bowl and then add oatmeal and almond butter, mixing until smooth. Mix in cinnamon, baking soda, sea salt, and vanilla. Then add in raisins and coconut and mix well.

 

Scoop by tablespoon onto lightly oiled baking sheet and smash flat. Bake at 375 degrees for approximately 10 minutes, until golden brown.

 

Makes about 1 dozen cookies.
